A memory of sun-drenched Caribbean shores flickers across my mind, transporting me back to the Cacao Factory in St. Lucia. There, with a sense of wonder, we grafted our very own cacao tree, affectionately christened “Elena.” We can only hope that on our return visit, Elena will reward us with pods bursting with the promise of intensely flavoured chocolate.

Have you ever pondered the secret behind truly exceptional chocolate? The answer lies in the humble cocoa bean itself. The perfect bean thrives under a specific set of conditions: balmy temperatures between 20-32°C, annual rainfall ranging from 1,000-2,500 mm, and nutrient-rich, well-drained soil. These conditions are often found nestled amongst the volcanic activity of regions like Indonesia and Ecuador.

Cocoa trees, with their deep aversion to harsh sunlight, huddle together for shade, finding protection under the watchful gaze of taller trees that shield them from wind and rain. It takes these patient giants roughly three years to produce their first precious pods, and they continue to grace us with their bounty for over 50 years. The main harvest period falls between November and February, a time of sweet anticipation for chocolate lovers around the world.

Seven generations strong, Favarger is a testament to a family’s enduring love story with chocolate. Founded in 1826, the Favarger Chocolate Factory was a pioneer in the Swiss chocolate industry. 3. Auer Chocolatier:

Since 1939, Auer Chocolatier has been a haven for Geneva’s chocolate enthusiasts, established by the visionary Claude Auer. A commitment to tradition ensures that these treats are crafted using time-tested recipes, offering a truly authentic chocolate experience. Location: Rue de Rive, 4.

4. Philippe Pascoet:

My first foray into the world of Geneva’s chocolatiers led me to the doorstep of Philippe Pascoet.
